On the occasion of Diwali, it is available in the market at a very high rate, even in the off season, its rates are around 1000-1200.  Cashew Katli is a traditional Indian cashew fudge candy that melts in your mouth and tastes like butter. It is fully customizable with your favorite flavors. This is the easiest to make at home, although you can make it according to my instructions, taking some precautions, this recipe will be very useful to give you a sweet gift for family and friends.

materials-:

1 cup cashew nuts
1/4 cup milk powder
3/4 cup sugar
1/4 cup water
2 tablespoons rose water or
1 teaspoon cardamom powder
1 teaspoon saffron soaked in milk
 Butter paper or plastic sheet
 Silver work or finely chopped pistachios

 recipe-:

-Take cashew nuts in a blender pot and grind them.We have to make a fine mixture of cashews, do not stir it continuously and keep checking in between because because of too much blending, the powder starts to thicken like chutney, this is because cashews start leaving their oil.

- Take a small sieve strainer and sieve the cashew powder. So that the thick pieces of cashew nut can be removed, grind the remaining coarse pieces again and filter the powder again.

-Take powder in a vessel and add milk powder. You can also use dairy whitener. Mix well and keep aside.

-To make sugar syrup, take a heavy bottom pan or non stick pan, add sugar and water to it. Mix well, when the sugar dissolves and the sugar syrup comes to a boil, reduce the heat to medium. Till 5 Minute and continue cooking. We need a wire syrup for cashew slice, take syrup in a spoon to check it and let it cool down. When the syrup cools down, take a drop between two fingers to see if the wire is formed. Turn off the gas when a wire becomes syrup.

-You can also add cardamom powder, saffron syrup or rose water.Add cashews and milk powder to the sugar syrup and mix well.

-Turn on the gas and cook for only 5 more minutes. Keep stirring continuously so that the kernels do not fall off. Turn off the gas and spread the mixture well in the pan. Let it rest for about 10 minutes.

-After -10 minutes, take out the mixture in a wide pot and knead it. The most important tip in making cashew nut is that the better we make it, the more soft it will become.

- Put this mixture on a plastic sheet and spread it well with a rolling pin, we will keep it thick by half an inch. You cut it into a diamond shape.

- It can be decorated with silver work. You can also skip Silver Work. This is optional, instead we can finely chop pistachios and top it.

suggestion for  maintain constantly÷

- Any nuts contain oil. If you mix continuously, heat will be generated and the nuts will start leaving the oil. To avoid this, do not constantly blend the nuts.
-If you check for consistency when the sauce is hot, then take some water in a bowl to check the consistency. Drop the cold syrup into the water. If the sugar syrup sits like a drop on the bottom of the bowl, the sugar syrup is cooked.
